Heading to Mexico today. Have not visited but family have lived there. The ingredients for the guacamole are all there, limes ripening in New Zealand now, the coriander dug up and the pot kept in warm sunny spot. The tortillas are the best we have ever tasted and are made right here in Kapiti, they are usually available for delivery from http://www.remarkabletortillas.co.nz and they do excellent corn ones as well.
The suitcases are there because whilst pondering Mexico and Mexicans I got to thinking about immigration and people living in countries new to them and how much harder it must be for them in these times, including anyone in New Zealand who hasn’t got their family with them.
